Grill 41 at Lord Elgin has new exec. chef

Ottawa’s landmark Lord Elgin announced Tuesday that Brian Vallipuram, 50, is the hotel’s a new executive chef at the recently relaunched Grill 41, replacing Aurelio Petraglia who had been there about five months.
Aurelio, who headed the kitchen for the Fortune 500 company Sodexo, which has run food and beverage at the hotel for nine years, left on Jan. 20 to return with his family to Toronto, according to the hotel. His replacement started on Jan. 25.
Not affected by the moves is Piero Catalfo, who remains executive sous-chef.
Born in Sri Lanka, chef Brian’s most recent posting was as executive chef for Panorama Mountain Village Resort in Panorama, British Columbia. He began his Canadian career at Oliver’s Bistro in Toronto in 1987, followed by a position at chef Mark McEwan’s prestigious North 44 where he remained nine years, first as sous chef and then as executive chef.
In 1999, chef Brian ventured out on his own to open Axcess Restaurant, recognized as one of Toronto’s top dining rooms, winning him many awards. Axcess became 1055 Restaurant and Catering. He has also served as head chef at the White Witch Restaurant at the Ritz Carlton Hotel in Rose Hall, Jamaica.
